Quinoa Salad Recipe 

 2 cups cold, cooked quinoa 

1 cup cold brococcli, chopped and blanched 

1 cup cold caulifolower, chopped and blanched 

1 or 2 organic oranges, peeled and chopped 

1/2 cup dried cranberries 1/2 cup chopped California walnuts 

1 cup chopped peppers, assorted colors 

1/3 cup flax oil 

1/3 cup orange juice 

1/3 cup balsamic vinegar (or rice vinegar) 

 Cook quinoa - 1 cup grain to 2 cups of liquid in a rice cooker. Set for 20 minutes to cool down before mixing with other ingredients
